Its come to my conclusion that Diet Coke and Mentos are always done with the mentos being put in the bottle of coke...What happens if its the other way around..

If you put coke on Mentos, the Mentos don't explode - the soda just fizzes. You can't build any pressure that way, and you need pressure to make the fountain effect.
